What a 48-inch range actually asks of a 1980s Mandarin kitchen

Most Mandarin kitchens were drawn around a thirty-inch range. Putting a forty-eight inch one in is four separate jobs, and the cabinet is only the first of them.

The great majority of Mandarin kitchens were drawn between the 1970s and the 1990s, and they were drawn around a thirty-inch freestanding range. Nothing about them anticipated forty-eight inches of appliance, and when one goes in, four separate things have to be dealt with. People usually think about the first, budget for the second, and discover the third and fourth on the day.

We are not installers, and this is not a sales pitch. We write it because we spend a great deal of time diagnosing symptoms that turn out to be consequences of a retrofit done in a hurry, and it is cheaper for everybody if those problems are avoided rather than chased later.

One: the opening

Widening a cabinet run is the visible part of the job and the part everyone plans for. The traps are in the detail rather than the concept.

The opening has to be square and it has to be plumb, because the appliance will be levelled to itself and any twist in the opening will show as an uneven gap along the top edge for the rest of its life. The countertop ends either side have to be properly supported after the cut, not left cantilevered on what is now a shorter run of cabinet. And the finished width has to be the width the appliance actually asks for, not the width of the appliance, because the two are not the same number and the difference is the clearance the appliance needs to get rid of its own heat.

We see the consequences of the last one constantly. A range packed tightly into an opening that was cut to its exact body width has nowhere to send waste heat, and electronics that run hot fail early. That failure looks exactly like a component fault and is not one.

Two: the floor

In most of Mandarin this is a non-question, because the house is slab-on-grade and a slab does not care. Along Mandarin Road and on some of the older riverfront lots it is a real question, because those houses are sometimes framed over a crawl space.

A crated forty-eight inch range is close to five hundred pounds and it puts that weight on a small footprint. A framed floor sized for 1950s expectations will deflect under it, and the deflection does not stay in the floor. The appliance goes slightly out of level, the oven door then closes true on one side and proud on the other, and a heat gap opens at one corner. People chase that with hinges and seals for years.

If your kitchen floor is framed rather than poured, this is worth establishing before the appliance is ordered rather than after it is standing in the room.

Three: the gas run

A large range asks for considerably more gas than the appliance it replaced, and it asks for it all at once when several burners and an oven are working together. An existing run sized decades ago for a modest range will often be perfectly adequate at half output and marginal at full.

The symptom that results is peculiar and recognisable. Everything works beautifully most of the time. Then, with the oven up to temperature and three burners going, the flames go small and lazy and a simmer setting drops out altogether. Nothing is broken. The line simply cannot deliver what is being asked of it.

The shutoff valve deserves a mention too. It needs to be somewhere a person can actually reach without moving the appliance, and in retrofits it frequently ends up behind a cabinet back where nobody will ever get to it in a hurry.

Four: the circuit

Even a gas range has electrical demands, and a dual fuel or induction range has serious ones. Each needs a dedicated circuit of the right rating, run properly from the panel.

Mandarin’s large lots work against this. The kitchen is often at the far end of the house from the garage where the panel lives, and the run is long and expensive. The temptation to borrow from an existing circuit is understandable and the result is always the same: an appliance that behaves impeccably for weeks and then resets when the air handler starts, or drops out on the busiest evening of the month.

Those are supply symptoms. No part we could fit will cure them, and we would rather say so on the first visit than sell you a control board.

And the hood above it

A large range wants a hood that can keep up with it, and a hood is only as good as the duct behind it. Connecting a serious new hood to whatever duct was already in the wall is the single most common shortcut we see in this neighbourhood, and it produces a hood that sounds powerful and removes almost nothing.
